자기가 한 말이었다. 그런데 막상 게이트 앞에 서니, 이 넓은 공항에서 자기가 어디로 가는지 아는 사람이 아무도 없다는 사실이 목덜미를 서늘하게 했다.

한결이 화면을 봤다. 그리고 짧게 웃었다.

거기서 끝일 줄 알았는데, 3초 뒤에 하나가 더 왔다.

**[다니엘: 연습 중이야.]**

한결이 화면을 오래 봤다.

탑승이 시작됐다.

시드니 본점 주방은 멜버른보다 한 배 반쯤 컸다.

한결이 도착했을 때 이미 다섯 명이 조리복을 갈아입고 있었다. 인사는 짧았다. 여기 있는 사람들은 다 자리 하나를 두고 겨루러 온 사람들이었다.

키가 큰 프랑스인 하나. 리옹에서 왔다고 했다. 자격증 얘기를 두 번 했다.

클로이가 들어왔다. 뒤에 심사관 둘이 따라왔다.

"여덟 시간이야. 오전 세 시간은 기본기, 오후 네 시간은 실제 디너 라인, 마지막 한 시간은 자유 과제."

클로이가 스테인리스 테이블을 손바닥으로 한 번 쳤다.

"오후 라인은 진짜 손님이 들어와. 여러분 실수는 여러분 실수가 아니라 우리 접시야."

"자유 과제 조건은요?"

프랑스인이 물었다.

"한 접시. 재료는 저 워크인에 있는 것만. 그리고 카드에 요리 이름과 본인 이름을 쓴다."

클로이의 시선이 한 번 한결 쪽을 스쳤다.

"판단 기준은 하나야. **이 접시가 당신 접시인가.**"

오전은 기본기였다.

프렌치 나이프로 감자 투르네 열 개. 사프란 육수 클라리피케이션. 홀랜다이즈 두 배치. 그리고 3분 안에 닭 한 마리 해체.

한결은 손이 빨랐다. 한국에서 5년 동안 매일 아침 여섯 시부터 했던 것들이었다.

투르네에서 두 개를 다시 깎았다. 클라리피케이션은 한 번에 맑게 나왔다.

심사관이 그의 육수를 스푼으로 떠서 빛에 비춰 봤다.

"Clean."

한 단어였다. 다니엘의 "그거면 됐다"와 비슷한 온도였다.

한결은 숨을 골랐다.

오후 5시. 디너 라인이 열렸다.

여섯 명이 각각 스테이션 하나씩을 맡았다. 한결은 소스였다.

"Order in! Two barramundi, one lamb rack. Three duck!"

익숙한 소음이었다. 다른 주방인데 리듬은 같았다.

한 시간쯤 지났을 때, 옆 스테이션에서 소리가 났다.

"……merde."

프랑스인이었다.

한결이 고개를 돌렸다. 그의 팬 위에서 오리 가슴살 표면이 평소보다 반 박자 일찍 진해지고 있었다. 껍질에서 올라오는 연기의 결이 달랐다.

한결은 그 장면을 어디서 봤는지 정확히 알았다.

*3초.*

머리가 계산을 시작했다.

지금 자기 소스는 팬 위에 두 개가 올라가 있다. 몽떼 직전이다. 여기서 손을 떼면 유화가 깨진다. 그리고 남의 파트에 손대는 건 트라이얼에서 감점이다. 확실히 감점이다.

무엇보다 저 사람은 자리 하나를 두고 겨루는 상대였다.

한결은 집게를 들었다.

"Behind! 레스팅 1분 줄이고, 버터 지금."

프랑스인이 돌아봤다. 얼굴이 하얗게 굳어 있다가, 3초 뒤에 움직였다.

"……Heard."

오리 가슴살이 렉 위로 올라갔다.

한결이 자기 스테이션으로 돌아왔을 때, 팬 위의 소스 하나는 이미 유화가 깨져 있었다.

그는 그 배치를 버리고 처음부터 다시 잡았다. 티켓 두 장이 밀렸다.

심사관이 뭔가를 적었다.

밤 9시 10분. 자유 과제.

한결은 워크인 앞에 서서 3분을 보냈다.

남아 있는 건 별로 없었다. 양지 자투리. 무. 대파 아랫동. 표고 밑동. 다들 앞선 과제에서 좋은 부위를 가져갔다.

한결이 양지 자투리를 집었다.

*이걸로 뭘 하지.*

그리고 그 순간, 그는 자기가 무엇을 만들려고 하는지 알았다.

한국에서 5년 동안 그가 제일 많이 만든 건 소스가 아니었다. 육수였다. 매일 새벽 여섯 시에 첫 번째로 하는 일이었고, 다섯 시간이 걸렸고, 그의 이름은 어디에도 안 붙었다.

한 시간밖에 없었다.

한결은 양지를 얇게 저며 넓은 팬에 펼쳤다. 표면을 세게 지져 색을 낸 뒤 물을 붓고, 무와 대파 아랫동을 통째로 넣었다. 그리고 불을 최대로 올렸다.

다섯 시간짜리를 한 시간으로 줄이려면 정공법으로는 안 된다.

한결은 표고 밑동을 따로 볶아 감칠맛을 뽑고, 그 국물을 나중에 합쳤다. 거품을 세 번 걷어 냈다. 마지막 15분에 국물을 면포에 두 번 내렸다.

접시에 담은 건 국물과, 그 국물로 익힌 무 한 조각, 그리고 결대로 찢은 양지였다.

색이 거의 없었다. 옆 사람의 접시는 소스가 세 가지 색이었다.

한결은 카드를 집어 펜을 들었다.

3초쯤 생각하다가 적었다.

그리고 그 아래에.

5년 만에 처음으로, 자기가 만든 것 위에 자기 이름을 적었다.

밤 10시 40분.

여섯 명이 주방 한쪽에 서 있었다. 클로이와 심사관 둘이 접시 여섯 개 앞을 지나갔다.

한결의 접시 앞에서 심사관 하나가 눈썹을 올렸다.

"이건 좀…… 소박한데요."

"먹어 봤어?"

클로이가 물었다.

심사관이 스푼을 들었다. 국물을 조금 떠서 입에 넣었다.

몇 초가 지나갔다.

"……한 시간에 이 맛이 나온다고?"

"그게 이 접시 전부야."

클로이가 카드를 집어 들었다.

"Six A.M. 새벽 여섯 시."

그녀가 한결을 봤다.

"한국에서 매일 여섯 시에 육수 잡았어?"

"네."

"몇 년."

"5년이요."

"그동안 그거에 네 이름 붙은 적 있어?"

한결이 잠깐 대답하지 못했다.

"……없습니다."

클로이가 카드를 내려놓았다.

"결정 전에 하나 짚을게."

심사관 하나가 클립보드를 넘겼다.

"서한결 씨. 오후 라인에서 남의 스테이션에 개입했습니다. 규정상 감점입니다."

"압니다."

"그리고 그 때문에 본인 소스 한 배치가 깨졌고, 티켓이 두 장 밀렸습니다."

"그것도 압니다."

"왜 했습니까?"

한결이 고개를 들었다.

"그 접시가 손님한테 나가는 거였으니까요."

"경쟁자였는데요."

"경쟁은 우리끼리 하는 거고, 접시는 손님한테 가잖아요."

심사관이 뭔가를 적으려다가 멈췄다.

"그리고 하나만 더 말씀드려도 됩니까."

"하세요."

"저 오리, 제가 손 안 댔으면 오버쿡으로 나갔습니다."

한결이 프랑스인 쪽을 잠깐 봤다.

"그럼 저 사람이 오늘 낸 다른 접시들까지 다 그 하나로 기억됐을 겁니다. 저는 그거 어떤 건지 알아서요."

주방이 조용해졌다.

클로이가 클립보드를 덮었다.

"충분해."

밤 11시 20분. 여섯 명 중 다섯이 나갔다.

클로이가 한결에게 서류철 하나를 내밀었다.

"축하해."

한결의 손이 굳었다.

"……저요?"

"너 말고 누구."

클로이가 어깨를 으쓱했다.

"기본기는 프랑스 애가 더 좋았어. 자유 과제도 화려한 접시가 둘 있었고."

"그럼……"

"근데 나는 여덟 시간짜리 사람을 뽑는 게 아니라 2년짜리 사람을 뽑아."

그녀가 서류철을 열었다.

"라인에서 남의 접시를 보는 애는 흔하지 않아. 그리고 그걸 자기 감점 감수하고 하는 애는 더 없고."

한결이 서류를 받았다.

"……비자 만료가 2주 남았는데요."

한결이 숨을 뱉었다. 손끝이 떨렸다.

"클로이."

"응."

"고맙습니다."

"고마워하지 마. 나 너 뽑은 거지 도와준 거 아니야."

클로이가 서류의 마지막 장을 넘겼다.

"그리고 조건 하나 확인하고."

한결이 그 페이지를 내려다봤다.

한결의 시야가 그 한 줄에서 멈췄다.

"2년. 그룹 내 이동은 그 뒤에 검토해."

클로이가 서류철을 덮어 한결의 손에 쥐여 줬다.

"자리를 만들어 달라고 하면 만들어 줄 사람은 있겠지. 근데 그건 네가 지난달에 거절한 거잖아."

한결이 서류를 두 손으로 잡았다.

"……맞네요."

"3일 줄게. 월요일 아침까지 답 줘."

클로이가 조리복 소매를 걷어 내리며 문 쪽으로 걸었다. 그리고 나가기 전에 한 번 돌아봤다.

"한."

"네."

"아까 그 국물 말이야."

"……네."

"내가 6년 동안 심사하면서 먹은 것 중에 제일 맛있었어."

문이 닫혔다.

한결은 빈 주방 한가운데에 혼자 서 있었다.

이겼다. 자기 힘으로 이겼고, 아무도 봐주지 않았고, 종이 위에 자기 이름이 적혀 있었다.

그리고 그 종이가 그를 다니엘에게서 900킬로미터 떨어진 곳으로 보내고 있었다.

한결은 휴대전화를 꺼냈다.

화면에 아직 열여덟 시간 전 메시지가 떠 있었다.

**[다니엘: 연습 중이야.]**

한결이 통화 버튼을 눌렀다.

두 번째 신호에 받았다.

"……붙었어요."

전화 너머가 조용했다.

한결은 그 침묵 속에서 이 남자가 지금 무슨 표정을 하고 있을지 알 것 같았다.

그리고 다니엘이 말했다.

"축하해, 한결."

한결의 눈이 뜨거워졌다.

"연습한 보람 있네요."

"어. 백 번쯤 했어."

"……잘하시던데요."

"그럼 이제 나머지도 말해."

다니엘의 목소리가 낮아졌다.

"시드니지."

한결이 대답하지 못했다.

"괜찮아. 알고 있었어."

"……어떻게요."

"클로이가 멜버른에 수 셰프 자리를 안 만들 거라는 거, 나는 알았지."

전화기 너머에서 짧게 숨 뱉는 소리가 났다.

"그 여자는 자리를 만들어서 사람을 넣는 짓을 제일 싫어해."

Thursday, five forty in the morning.

The gate at Melbourne Tullamarine was quiet. Hangyeol was carrying one backpack and one knife bag.

The knife bag was in its fifth year. He had never replaced it since he bought it with his first pay in Korea.

*There must not be a single person there who knows me.*

Those were his own words. But he was standing in front of the gate now. The fact that nobody in this whole airport knew where he was going put a chill on the back of his neck.

Buzz—

**[Daniel: Did you bring the knife.]**

Hangyeol looked at the screen. And he gave a short laugh.

**[Hangyeol: I brought it.]**

**[Daniel: Then that's enough.]**

He thought that was the end of it, but three seconds later one more came.

**[Daniel: I'm practicing.]**

Hangyeol looked at the screen for a long time.

Boarding began.

The Sydney kitchen was about half again as big as the one in Melbourne.

By the time Hangyeol arrived, five others were already changing into chef coats. The greetings were short. Everyone here had come to fight over one spot.

One tall Frenchman. He said he was from Lyon. He mentioned his certificates twice.

Chloe came in. Two judges followed behind her.

"Eight hours. Three hours of basics in the morning, four hours on a real dinner line in the afternoon. Then one hour of free task at the end."

Chloe hit the steel table once with her palm.

"Real guests come in on the afternoon line. Your mistake isn't your mistake, it's our plate."

"What are the conditions on the free task?"

The Frenchman asked.

"One plate. Ingredients only from that walk-in. And you write the name of the dish and your own name on the card."

Chloe's eyes went past Hangyeol once.

"There's one standard. *Is this plate your plate.*"

The morning was basics.

Ten potato tournés with a French knife. Clarification of a saffron stock. Two batches of hollandaise. And breaking down one chicken in three minutes.

Hangyeol's hands were fast. These were the things he had done every morning from six o'clock for five years in Korea.

He shaped two of the tournés again. The clarification came out clear on the first try.

A judge lifted a spoonful of his stock and held it up to the light.

"Clean."

It was one word. It was about the same temperature as Daniel's That's enough.

Hangyeol steadied his breath.

Five in the afternoon. The dinner line opened.

The six of them each took one station. Hangyeol had sauce.

"Order in! Two barramundi, one lamb rack. Three duck!"

It was a familiar noise. A different kitchen, but the same rhythm.

About an hour in, a sound came from the next station.

"......merde."

It was the Frenchman.

Hangyeol turned his head. On the Frenchman's pan the surface of a duck breast was darkening half a beat earlier than it should. The grain of the smoke off the skin was different.

Hangyeol knew exactly where he had seen that before.

*Three seconds.*

His head started counting.

Right now two of his own sauces were on the heat. They were one step from the monté. If he took his hand off here, the butter and the stock would split and the **emulsion** would break. And putting a hand into someone else's section is a deduction at a trial. A certain deduction.

Above all, that man was a rival for the one spot.

Hangyeol picked up the tongs.

"Behind! Cut the resting by a minute, butter now."

The Frenchman turned around. His face had gone white and stiff, and three seconds later he moved.

"......Heard."

The duck breast went up onto the rack.

When Hangyeol got back to his own station, the emulsion on one of the pans had already broken.

He threw that batch out and started it again from the beginning. Two tickets were held up.

A judge wrote something down.

Ten past nine at night. The free task.

Hangyeol stood in front of the walk-in for three minutes.

There was not much left. Brisket trimmings. Radish. The lower stalks of spring onion. Shiitake stems. Everyone had taken the good cuts in the earlier tasks.

Hangyeol picked up the brisket trimmings.

*What do I make with this.*

And in that moment he knew what he was going to make.

For five years in Korea the thing he had made most was not sauce. It was stock. It was the first job of every morning at six, it took five hours, and his name went on none of it.

He had only one hour.

Hangyeol sliced the brisket thin and spread it over a wide pan. He seared the surface hard for color, poured water in, and put the radish and the lower stalks in whole. Then he took the heat all the way up.

You cannot cut a five-hour job down to one hour by the straight road.

Hangyeol fried the shiitake stems separately to draw the savor out and folded that liquid in later. He **skimmed** the gray foam off the top three times. In the last fifteen minutes he passed the broth twice through cloth.

What went on the plate was the broth, one piece of radish cooked in that broth, and brisket pulled apart along the grain.

There was almost no color. The plate beside his had sauce in three colors.

Hangyeol picked up the card and took a pen.

*The name of the dish.*

He thought for about three seconds and wrote.

*Six A.M.*

And under it.

*Han-gyeol Seo*

For the first time in five years, he wrote his own name on something he had made.

Twenty to eleven at night.

The six of them stood at one side of the kitchen. Chloe and the two judges went past the six plates.

In front of Hangyeol's plate one of the judges raised an eyebrow.

"This is a little...... **modest**, isn't it."

"Did you taste it?"

Chloe asked.

The judge picked up a spoon. He took a little of the broth and put it in his mouth.

A few seconds went by.

"......You get this taste in one hour?"

"That's the whole of this plate."

Chloe picked up the card.

"Six A.M. Six in the morning."

She looked at Hangyeol.

"Did you pull stock at six every morning in Korea?"

"Yes."

"How many years."

"Five years."

"In all that time did your name ever go on it?"

For a moment Hangyeol could not answer.

"......It didn't."

Chloe put the card down.

"Before we decide, let me point out one thing."

One of the judges turned a page on the clipboard.

"Mr. Seo. On the afternoon line you stepped into another cook's station. Under the rules that is a **deduction**."

"I know."

"And because of it one batch of your sauce broke and two tickets were held up."

"I know that too."

"Why did you do it?"

Hangyeol raised his head.

"Because that plate was going out to a guest."

"He was a rival."

"The competition is between us, and the plate goes to the guest."

The judge started to write something and stopped.

"And may I say one more thing."

"Go ahead."

"That duck. If I hadn't touched it, it would have gone out overcooked."

Hangyeol looked toward the Frenchman for a moment.

"Then that one plate would have been all anyone remembered of everything else he sent out today. I know what that's like."

The kitchen went quiet.

Chloe closed the clipboard.

"That's enough."

Twenty past eleven at night. Five of the six had gone.

Chloe held a folder out to Hangyeol.

"Congratulations."

Hangyeol's hand went stiff.

"......Me?"

"Who else."

Chloe shrugged.

"The Frenchman was better on the basics. And there were two showier plates on the free task."

"Then......"

"But I'm not picking an eight-hour person. I'm picking a two-year person."

She opened the folder.

"A cook who watches someone else's plate on the line isn't common. And one who does it knowing it costs him points is rarer."

Hangyeol took the papers.

"The nomination goes out in the group company's name. We lodge it next Monday, and the result takes three to six weeks."

"......My visa runs out in two weeks."

"You'll get a **bridging** visa. Once we lodge it you stay here legally until the assessment ends. Don't worry about that."

Hangyeol let his breath out. His fingertips were shaking.

"Chloe."

"Yes."

"Thank you."

"Don't thank me. I picked you, I didn't help you."

Chloe turned to the last page of the papers.

"And one condition to check."

Hangyeol looked down at that page.

"The posting is Sydney."

Hangyeol's eyes stopped on that one line.

"Two years. A move inside the group gets looked at after that."

"......Melbourne isn't possible?"

"There's no sous chef position in Melbourne."

Chloe closed the folder and put it into Hangyeol's hands.

"If you asked for a position to be created, there'd be someone who would create it. But that's the thing you turned down last month."

Hangyeol held the papers in both hands.

"......You're right."

"I'll give you three days. Answer me by Monday morning."

Chloe rolled her sleeves down and walked toward the door. And before she went out she looked back once.

"Han."

"Yes."

"That broth earlier."

"......Yes."

"It was the best thing I've eaten in six years of judging."

The door closed.

Hangyeol stood alone in the middle of the empty kitchen.

He had won. He had won on his own, nobody had let him through, and his name was written on paper.

And that paper was sending him to a place nine hundred kilometers from Daniel.

Hangyeol took out his phone.

The message from eighteen hours before was still on the screen.

**[Daniel: I'm practicing.]**

Hangyeol pressed the call button.

Daniel picked up on the second ring.

"......I passed."

The other end of the line was quiet.

In that silence Hangyeol felt he knew what this man's face looked like right now.

And then Daniel spoke.

"Congratulations, Hangyeol."

Hangyeol's eyes went hot.

"The practice paid off."

"Yeah. About a hundred times."

"......You were good at it."

"Then tell me the rest now."

Daniel's voice went lower.

"It's Sydney."

Hangyeol could not answer.

"It's all right. I knew."

"......How."

"That Chloe wouldn't create a sous chef position in Melbourne — I knew that."

A short breath came out on the other end of the line.

"That woman hates nothing more than creating a position just to put someone in it."
