14화 위험한 30분
지하 펍은 이미 뜨겁게 달아올라 있었다.
테이블마다 놓인 맥주 피처와 잔이 부딪치는 소리가 시끄럽게 울렸다. 사흘 동안 아무도 큰 소리를 못 냈던 사람들이 한꺼번에 떠들고 있었다.
"우리 한 왔어! 이쪽으로 와서 앉아!"
리암이 벌개진 얼굴로 한결의 팔을 끌어당겨 제 옆자리에 앉혔다.
한결은 어색하게 웃으며 잔을 받았다. 온 신경은 자꾸만 출입구 쪽으로 쏠렸다.
*그 인간, 진짜 30분만 기다리겠지.*
오피스에서 나눴던 숨결과 입술의 감촉이 아직 생생했다. 그런데 지금은 주방 사람들과 웃으며 맥주를 마시고 있었다. 거대한 비밀 하나를 안고 벼랑 끝에 서 있는 기분이었다.
"한, 오늘 메인 파트 쳐낸 거 진짜 예술이었어. 다니엘도 엄청 만족스러워하던데? 원래 그 영감탱이…… 아니, 우리 헤드 셰프 칭찬에 박한 거 알잖아."
리암이 너스레를 떨며 잔을 부딪쳐 왔다.
"그러게요. 다들 고생 많았죠."
그때 펍의 무거운 나무 문이 열리고 서늘한 공기가 밀려들었다.
다니엘이었다.
조리복을 벗고 검은 셔츠 차림으로 나타난 그가 문간에 서자, 펍 안의 시선이 자연스럽게 그쪽으로 모였다.
"오, 헤드 셰프 입장하신다!"
리암이 환호하며 손을 흔들었다.
다니엘은 가볍게 목례하며 직원들의 인사를 받았다. 하지만 그의 시선은 펍에 들어온 순간부터 한 번도 한결에게서 벗어나지 않았다.
그는 스태프들의 권유에 마지못한 듯 바 테이블 쪽으로 향했다.
한결은 눈이 마주치자마자 황급히 시선을 돌려 맥주잔을 입가로 가져갔다. 심장이 다시 뛰기 시작했다.

주머니 속 휴대전화가 가볍게 떨렸다. 한결이 몰래 화면을 확인했다.
**[다니엘: 15분 남았어, 한.]**
한결은 터져 나오려는 웃음을 참으며 화면을 껐다.
주방에서는 냉정한 헤드 셰프였다. 그런데 지금 저 남자는 바 스툴에 앉아서 시계를 재고 있었다.
"뭐야, 뭔데 그렇게 웃어."
리암이 옆에서 물었다.
"아무것도 아니에요."
"한."
리암의 목소리가 방금과 톤이 달랐다.
한결이 고개를 돌렸다. 리암은 바 테이블 쪽을 보고 있었다.
"아까 주방에서 이름 하나 말했잖아."
한결의 손이 잔 위에서 멈췄다.
"정우."
"기억하네."
리암이 맥주를 한 모금 마셨다. 아까까지의 취기가 조금 빠진 얼굴이었다.
"4년 전에 여기 라인쿡. 너처럼 한국에서 왔어. 워홀로."
한결은 아무 말도 하지 않았다.
"손이 좋았어. 다니엘이 처음으로 소스 파트 통째로 맡긴 애야. 그 전에도 그 후에도 없었고. 너 전까지는."
리암이 잔을 내려놓았다.
"둘이 사귀었어. 반년쯤 아무도 몰랐고."
"……"
"알려지고 나서가 문제였지."
한결의 목 안쪽이 말랐다. 시끄러운 펍 안에서 이 테이블만 소리가 죽은 것 같았다.
"주방이 갈라졌어. 반은 정우 편, 반은 아니었고. 근데 진짜 망한 건 그다음이야."
리암이 손가락으로 테이블을 한 번 두드렸다.
"정우가 실수를 했어. 스톡 하나 통째로 날린 거. 누구나 하는 실수야. 근데 다니엘이 그걸 덮었어. 자기가 지시한 걸로 기록을 바꿨어."
"……보호한 거잖아요."
"그렇지. 보호했지."
리암이 한결을 봤다.
"그날부터 아무도 정우를 요리사로 안 봤어. 접시가 잘 나가면 셰프가 봐줘서고, 못 나가면 셰프가 덮어줄 거고."
"……"
"그래도 반년을 버텼어. 다니엘이 비자 서류 해 준다고 했거든."
리암이 잔을 돌렸다.
"근데 그게 반려됐어. 본사에서."
한결의 손끝이 잔 위에서 멈췄다.
"그러고 한 달도 안 돼서 나갔어. 자기 발로."
"……그다음엔요."
"체류 기한 남은 걸로 몇 주 있다가 한국 갔어."
리암이 어깨를 으쓱했다. 가벼운 동작이었는데 얼굴은 안 그랬다.
"그 뒤에 계약서에 조항이 하나 생겼어. 주방 내 사적 관계 금지. 4번."
한결은 잔을 내려다봤다.
*버릇이야.*
삼십 분 전에 오피스에서 들은 두 글자가 갑자기 다른 무게로 돌아왔다.
"리암."
"응."
"이거 왜 말해 주는 거예요."
"글쎄."
리암이 다시 맥주를 들었다.
"반은 네가 걱정돼서. 반은 내가 너 좋아해서."
한결이 고개를 들었다. 리암은 그를 똑바로 보고 있었다.
"둘 중에 뭐가 더 큰지는 나도 몰라. 그래도 사실은 사실이야."
"……"
"저 사람이 너 아끼는 건 나도 알아. 근데 저 사람이 누구 아끼는 방식이 뭔지도 알거든."
리암이 잔을 들어 보였다.
"그거 한 번 봤어. 두 번은 안 보고 싶고."
시계 바늘이 30분을 가리켰다.
한결이 자리에서 일어났다.
"먼저 들어가 볼게요. 사흘 내내 신경 썼더니 머리가 깨질 것 같아서요."
"벌써? 이제 시작인데."
리암이 붙잡았다. 아까보다 힘이 없는 손이었다.
한결이 펍을 빠져나가는 순간, 바 테이블에 앉아 있던 다니엘의 시선이 느릿하게 움직였다.
그는 스태프들과 대화를 나누는 척하면서도, 한결이 문을 빠져나가는 뒷모습을 눈으로 끝까지 쫓고 있었다.
잠시 뒤 다니엘이 시계를 힐끗 보더니 자리에서 일어났다.
"다들 즐겁게 마시게. 난 먼저 올라가 보겠어."

The basement pub had already heated up.
Beer pitchers sat on every table, and glasses knocked and rang loudly. People who had not been able to raise their voices for three days were all talking at once.
"There's our Han! Come sit over here!"
Liam, his face red, pulled Hangyeol by the arm and sat him down beside him.
Hangyeol smiled awkwardly and took the glass. All his attention kept drifting toward the door.
*That man will really wait just thirty minutes, won't he.*
The breath they had shared in the office, and the feel of those lips, were still fresh. And now he was laughing and drinking beer with the kitchen staff. He felt like a man standing at the edge of a cliff with one huge secret in his arms.
"Han, the way you ran the main section today was pure art. Daniel looked really pleased with it, you know? You know that old geezer... I mean, our head chef, never gives **praise** easily."
Liam joked around and knocked his glass against Hangyeol's.
"I know. Everyone worked hard."
Just then the heavy wooden door of the pub opened and cool air pushed in.
It was Daniel.
He had taken off his chef coat and come in a black shirt. When he stopped in the doorway, every eye in the pub turned that way.
"Oh, the head chef makes his entrance!"
Liam cheered and waved.
Daniel accepted the staff's greetings with a light nod. But from the moment he stepped into the pub, his eyes had not once left Hangyeol.
He headed for the bar table at the staff's **urging**, as if he did not really want to.
The moment their eyes met, Hangyeol turned away in a hurry and brought the beer glass to his mouth. His heart started beating fast again.
Bzzt—
The phone in his pocket shook lightly. Hangyeol checked the screen in secret.
**[Daniel: 15 minutes left, Han.]**
Hangyeol held back the laugh that wanted to break out and turned the screen off.
In the kitchen he was a cold head chef. And now that man was sitting on a bar stool, counting down those thirty minutes.
"What is it, what are you smiling at like that?"
Liam asked from beside him.
"It's nothing."
"Han."
Liam's voice had a different tone from a moment before.
Hangyeol turned his head. Liam was looking toward the bar table.
"Earlier, in the kitchen, I said a name."
Hangyeol's hand stopped on his glass.
"Jungwoo."
"So you remember."
Liam took a sip of beer. The flush of drink had faded from his face.
"A line cook here, four years ago. He came from Korea, like you. On a working holiday."
Hangyeol said nothing.
"He had good hands. He was the first one Daniel ever handed the whole sauce section to. Nobody before him, nobody after. Until you."
Liam set his glass down.
"The two of them were together. For about half a year nobody knew."
"..."
"The problem started once people found out."
The inside of Hangyeol's throat went dry. In the noisy pub, this table alone seemed to have gone quiet.
"The kitchen split in two. Half were on Jungwoo's side, half were not. But the thing that really **wrecked** it came after that."
Liam tapped the table once with a finger.
"Jungwoo made a mistake. He lost a whole batch of stock. Anyone can make that mistake. But Daniel covered it up. He changed the record to say that he had given the order himself."
"...He was protecting him, wasn't he."
"Right. He protected him."
Liam looked at Hangyeol.
"From that day on, nobody saw Jungwoo as a cook. If a plate went out well, Chef had gone easy on him; if it went out badly, Chef would cover it up."
"..."
"Still, he held on for half a year. Daniel had said he would do the visa papers for him."
Liam turned his glass.
"But the papers were turned down. By head office."
Hangyeol's fingertips stopped on the glass.
"And less than a month later he left. Of his own will."
"...And after that?"
"He stayed a few weeks on what was left of his time here, then went back to Korea."
Liam shrugged. The motion was light, but his face was not.
"After that, one **clause** was added to the contract. No personal relationships inside the kitchen. Clause 4."
Hangyeol looked down at his glass.
*It's a habit.*
The word he had heard in the office thirty minutes before came back with a different weight.
"Liam."
"Yeah."
"Why are you telling me this?"
"Who knows."
Liam picked up his beer again.
"Half because I'm worried about you. Half because I like you."
Hangyeol raised his head. Liam was looking straight at him.
"I don't know myself which of the two is bigger. But a fact is still a fact."
"..."
"I know that man cares about you. But I also know what his way of caring for someone looks like."
Liam held his glass up.
"I've seen that once. I don't want to see it twice."
The clock hands reached the end of the thirty minutes.
Hangyeol got up from his seat.
"I'm going to head in first. I was tense for three days straight, and now my head feels like it's splitting."
"Already? The night is just starting."
Liam caught his arm. There was less strength in the hand than before.
The moment Hangyeol slipped out of the pub, Daniel, seated at the bar table, moved his eyes slowly.
He **pretended** to be talking with the staff, but his eyes followed Hangyeol's back all the way out the door.
A little later Daniel glanced at his watch and stood up.
"Enjoy your drinks, everyone. I'm going up ahead of you."
