8화 불꽃의 궤적
오디트 3일차. 오후 1시 30분. 런치 피크가 정점에 있었다.
프린터가 티켓을 뱉고, 팬이 비명을 지르고, 일곱 개의 목소리가 겹쳤다. 그리고 그 한가운데에 체크리스트를 든 맥켄지가 서 있었다.
"Table four, one wagyu, medium well. Two duck breast!"
리암이 홀에서 오더를 외쳤다.
"Heard!"
통제대의 다니엘이 받았다. 마지막 날이었다. 여기서 무너지면 이틀이 사라진다.
"메인, 오리 몇 분?"
"3분입니다, Chef!"
고기 파트의 코미가 팬을 털며 소리쳤다.
한결의 눈이 그 팬 위에 멈췄다.
오리 가슴살 표면 색이 평소보다 반 박자 일찍 진해지고 있었다. 껍질 쪽에서 올라오는 연기의 결도 달랐다. 감사관이 뒤에 서 있다는 압박에 불 조절이 미세하게 틀어진 것이었다.
그대로 나가면 오버쿡이다. 맥켄지가 자를 것이고, 자르면 안다.
한결은 자기 스테이션을 벗어났다.
주방에서 남의 파트에 손을 대는 건 금기였다. 특히 감사 중에는 그게 팀 호흡 미스로 기록된다.
"레스팅 1분 줄이고, 레몬버터 포일. 지금 빼요."
한결이 집게로 오리 가슴살을 건져 렉 위에 올렸다.
코미의 얼굴이 하얘졌다가 곧 돌아왔다. 코미가 짧게 고개를 숙이고 버터를 얹었다.
맥켄지의 시선이 이쪽으로 돌아왔다.

다니엘이 한결의 조리대 앞으로 걸어와 섰다. 감사관의 시야에서 고기 파트가 사라지는 위치였다.
그는 한결이 손질해 둔 가니시 접시를 들어 올렸다.
"맥켄지. 이 가니시 온도와 색감을 보시죠. 오리 가슴살 풍미를 살리려고 불꽃 조절을 끝낸 상태입니다."
말이 끝나기 전에 한결은 이미 플레이팅에 들어가 있었다.
두 사람은 한 마디도 주고받지 않았다. 다니엘이 시야를 막은 3초 동안 한결이 접시를 완성했고, 다니엘이 몸을 비킨 순간 그 접시가 패스 위에 올라와 있었다.
맥켄지가 오리 가슴살을 잘랐다.
단면이 균일한 로제였다.
"훌륭하군. 텍스처가 완벽해."
오후 5시. 사흘이 끝났다.
맥켄지가 주방 한가운데서 클립보드를 넘겼다.
"위생, 동선, 텍스처, 위기 대응력. 본사 기준 최고 등급, A+."
주방이 터졌다.
누군가 냄비 뚜껑을 두드렸고 누군가 휘파람을 불었다. 코미가 한결의 등을 세게 쳤다. 사흘 동안 아무도 큰 소리를 내지 않았던 공간이 한꺼번에 시끄러워졌다.
"한!"
스윙 도어가 열리고 리암이 뛰어 들어왔다.
그는 주방 한복판까지 들어와 한결의 허리를 팔로 감아 그대로 반 바퀴 돌렸다. 스태프들이 웃음을 터뜨렸다.
"놔요, 리암!"
"오리 쳐낸 거 홀에서 다 봤어. 진짜 미쳤더라."
리암이 그를 내려놓으면서도 어깨에서 팔을 떼지 않았다.
"오늘 아래 펍 간다. 너는 무조건 와. 이건 협상 아니야."
"저 피곤한데……"
"내가 업고라도 데려갈게."
주방 저편, 패스 스테이션에서 샴페인 잔을 받아 들던 다니엘의 손이 잔 위에서 멈췄다.
그는 웃고 있었다. 스태프들이 건네는 축하를 받고 있었고, 적절한 타이밍에 고개를 끄덕였다. 그런데 시선은 한 번도 그쪽으로 가지 않았다.
한 번도.
사흘 내내 한결의 손끝까지 좇던 눈이었다.
"……왜 저래."
한결이 자기도 모르게 중얼거렸다.
"응?"
리암이 그의 시선을 따라갔다. 다니엘과 스태프들, 샴페인, 그리고 이쪽을 보지 않는 얼굴.
리암의 팔에서 힘이 조금 빠졌다.
"한."
"네."
"너 지금 딱 정우 같다."
한결이 고개를 돌렸다.
"……누구요?"
리암이 한결을 봤다. 방금까지 사람 들쳐 업겠다던 얼굴에서 그 부분만 빠져 있었다.
"아니야. 아무것도."
"리암."
"펍에서 얘기해 줄게. 진짜로."
그때 주방을 가로질러 목소리가 왔다.
"한."
다니엘이었다. 이제야 이쪽을 보고 있었다.
"오디트 리포트 서명 건. 오피스로 올라와."

Audit day three. One thirty in the afternoon. The lunch peak was at its height.
The printer spat tickets, the pans screamed, and seven voices ran over each other. And in the middle of it stood Mackenzie, checklist in hand.
"Table four, one wagyu, medium well. Two duck breast!"
Liam called the order in from the floor.
"Heard!"
Daniel took it at the pass. It was the last day. Collapse here and two days vanish.
"Mains, how long on the duck?"
"Three minutes, Chef!"
The commis on the meat section shouted it, shaking out their pan.
Hangyeol's eyes stopped on that pan.
The surface of the duck breast was darkening half a beat earlier than usual. The grain of the smoke coming off the skin was different too. The pressure of the auditor standing behind them had thrown the flame control off by a hair.
Send it out like that and it is overcooked. Mackenzie would cut it, and once she cut it she would know.
Hangyeol left his own station.
Touching another section's work was **taboo** in a kitchen. During an audit especially, it went down as a break in team rhythm.
"Cut the resting by a minute, lemon butter, foil it. Pull it now."
Hangyeol lifted the duck breast out with tongs and set it on the rack.
The commis went white, then the color came back. They dipped their head once and laid the butter on.
Mackenzie's eyes came back this way.
Clack.
Daniel walked over and stood in front of Hangyeol's counter. It was the position where the meat section disappeared from the auditor's view.
He lifted the garnish plate Hangyeol had prepped.
"Mackenzie. Look at the temperature and the color on this garnish. The flame control has already been adjusted to bring out the flavor of the duck breast."
Before he finished speaking, Hangyeol was already plating.
The two of them did not exchange a word. In Daniel's three seconds of cover Hangyeol finished the plate, and the moment Daniel stepped aside it was on the pass.
Mackenzie cut the duck breast.
The cross-section was an even rosé.
"Excellent. The texture is perfect."
Five in the afternoon. The three days were over.
Mackenzie turned a page on the clipboard in the middle of the kitchen.
"Hygiene, workflow, texture, crisis response. Top grade by head office standards, A+."
The kitchen **exploded**.
Someone banged a pot lid and someone whistled. The commis hit Hangyeol hard on the back. For three days that room had carried nothing but the sounds of work. All at once it was loud.
"Han!"
The swing door opened and Liam came running in.
He came all the way to the middle of the kitchen, **hooked** an arm around Hangyeol's waist and turned him half a circle. The staff burst out laughing.
"Let go, Liam!"
"I saw the whole thing with the duck from the floor. That was insane."
Liam set him down and kept his arm around Hangyeol's shoulder.
"We're going down to the pub tonight. You're coming, no question. This isn't a **negotiation**."
"I'm tired, though..."
"I'll carry you on my back if I have to."
Across the kitchen, at the pass station, Daniel's hand stopped over the champagne glass he was taking.
He was smiling. He was accepting the congratulations the staff handed him, nodding at exactly the right moments. But his eyes never once went that way.
Not once.
For three days straight, those eyes had followed every motion of Hangyeol's hands.
"...What is with him."
Hangyeol **muttered** it without meaning to.
"Hm?"
Liam followed his gaze. Daniel and the staff, the champagne, and a face that was not looking this way.
The strength went out of Liam's arm a little.
"Han."
"Yeah."
"You look exactly like Jungwoo right now."
Hangyeol turned his head.
"...Who?"
Liam looked at Hangyeol. The face that had just offered to carry him had lost all its playfulness.
"It's nothing. Forget it."
"Liam."
"I'll tell you at the pub. I mean it."
Then a voice came across the kitchen.
"Han."
It was Daniel. Only now was he looking this way.
"The audit report signature. Come up to the office."
