"내일부터 사흘간 시드니 본사 통합 오디트다."

마감 20분 전. 다니엘의 한마디에 주방의 소음이 한꺼번에 죽었다.

닦던 손, 접던 행주, 옮기던 컨테이너가 전부 멈췄다. 한결은 그 정적의 밀도로 이게 어떤 종류의 공지인지 짐작했다.

"위생, 동선, 온도 기록, 식자재 라벨링. 사흘 내내 본다."

다니엘이 스틸 클립보드를 조리대에 툭 내려놓았다. 금속음이 짧게 튀었다.

"기록은 본사에 남는다. 여기서 받은 평가가 앞으로 너희 이름 옆에 붙어 다닌다는 뜻이야."

한결의 손끝이 조금 움직였다.

이름 옆에 붙는다. 한국에서 5년을 일하는 동안 그의 이름이 어딘가에 기록으로 남은 적은 한 번도 없었다. 접시는 나갔지만 그 접시는 늘 다른 사람의 것이었다.

"오늘 밤 메인 소스 야간 프렙을 돌린다. 소스 파트에서 한 명 남아."

다니엘이 주방을 훑었다. 아무도 눈을 마주치지 않았다.

"제가 남겠습니다."

한결이 손을 들지도 않고 말했다.

다니엘의 시선이 그에게 정확히 꽂혔다.

"왜."

"제 소스니까요."

주방 구석에서 누군가 낮게 휘파람을 부는 소리가 났다. 스윙 도어 쪽에 서 있던 리암이 한결을 봤다. 웃고 있지 않았다.

밤 11시. 스태프가 전부 빠져나간 주방에는 간조명 하나만 켜져 있었다.

낮 동안 이 공간을 채우던 프린터 소리, 팬 소리, 일곱 개의 목소리가 전부 사라졌다. 남은 건 보일링 팬에서 소스가 끓는 소리뿐이었다.

한결은 나무 주걱으로 팬 바닥을 천천히 긁었다. 김이 얼굴로 올라왔다. 턱 끝에 땀이 맺혔다가 떨어졌다.

낮에는 이 주방이 좁다고 느꼈다. 밤에는 너무 넓었다.

스벅.

구두 소리가 등 뒤 세 걸음 자리에서 멈췄다.

한결은 돌아보지 않았다. 이제 이 소리가 어느 거리에서 멈추는지로 상대의 용건을 짐작할 수 있었다. 세 걸음은 업무였다.

"농도는."

"80퍼센트까지 줄였습니다. 산도만 맞추면 됩니다."

"맛."

한결이 스푼으로 소스를 조금 떠서 몸을 돌렸다.

그 순간 세 걸음이 한 걸음이 됐다.

다니엘이 스푼을 받으려고 손을 뻗었다.

엄지 마디가 한결의 손등을 지나갔다. 뜨거운 팬 앞에 서 있던 손과, 홀에서 막 들어온 손. 온도 차가 먼저 왔고 감촉은 반 박자 늦게 왔다.

한결의 숨이 멎었다.

손등에서 시작한 감각이 팔뚝을 타고 어깨까지 올라왔다. 팬은 여전히 끓고 있었고, 김은 여전히 올라오고 있었고, 그런데 그 3초 동안 소리가 하나도 들리지 않았다.

다니엘이 스푼을 입에 넣었다.

"농축은 좋다."

그가 고개를 숙인 자세 그대로 말했다. 한결의 이마 높이에 그의 목소리가 있었다.

"끝 맛에 단맛이 부족해."

"와인 당도가 낮아서……"

"버터 한 조각 더. 몽떼 다시 잡아."

"네."

"그리고."

다니엘이 스푼을 내려놓았다.

"온도 기록표, 2시간 간격 지켜. 맥켄지는 거기부터 판다."

"맥켄지요?"

"수석 감사관. 사흘 중 하루는 반드시 네 앞에 선다."

다니엘이 몸을 일으켰다. 압박이 물러나자 한결은 그제야 자기가 숨을 참고 있었다는 걸 알았다.

"다 하면 검수받고 퇴근해."

구두 소리가 멀어졌다. 문이 닫혔다.

한결은 조리대를 두 손으로 짚고 길게 숨을 뱉었다. 손등에 아직 그 온도가 남아 있는 것 같았다. 문질러 지웠다.

"……미쳤나 봐. 손등 하나에 뭐 하는 거야."

한국어였다.

문 밖 복도에서 멀어지던 구두 소리가, 딱 한 박자 느려졌다.

"Starting tomorrow, three days of a company-wide audit from Sydney head office."

Twenty minutes before close. One line from Daniel and the noise of the kitchen died all at once.

Hands mid-wipe, rags mid-fold, containers mid-carry — all of it stopped. Hangyeol could guess what kind of announcement this was from the sheer weight of the silence.

"Hygiene. Workflow. Temperature logs. Ingredient labeling. Three straight days of it."

Daniel set his steel clipboard down on the counter with a thud. A short metallic **clang** snapped off the steel.

"The record stays with head office. Whatever score you get here follows your name from now on."

Hangyeol's fingertips twitched slightly.

Next to his name. In five years of work in Korea, his name had never once been recorded anywhere. Plates went out, but those plates always belonged to someone else.

"Tonight we run night prep on the main sauces. One person from the sauce section stays."

Daniel swept his eyes across the kitchen. No one met his gaze.

"I'll stay."

Hangyeol said it without raising his hand.

Daniel's gaze landed on him dead on.

"Why."

"Because it's my sauce."

Somewhere in the corner of the kitchen, someone gave a low whistle. Liam, standing by the swing door, looked at Hangyeol. He wasn't smiling.

11 p.m. With every staff member gone, only a single low light lit the kitchen.

The printer's clatter, the pans, seven overlapping voices — everything that had filled this space by day was gone. All that was left was the sound of the sauce **simmering** in the pan.

Hangyeol scraped the bottom of the pan slowly with a wooden spatula. Steam rose into his face. A bead of sweat gathered at the tip of his chin and fell.

By day, this kitchen had felt cramped. At night, it felt far too big.

Scuff.

Footsteps stopped three paces behind him.

Hangyeol didn't turn around. By now he could guess the other man's business from the distance at which the sound stopped. Three steps meant work.

"Consistency."

"Reduced it to 80 percent. Just need to adjust the acidity."

"Taste."

Hangyeol scooped a little sauce onto a spoon and turned around.

In that instant, three steps became one.

Daniel reached out to take the spoon.

The joint of his thumb brushed across the back of Hangyeol's hand. A hand that had been at work over a hot pan, and a hand that had just come in from the floor. The difference in temperature arrived first; the touch came half a beat behind it.

Hangyeol's breath stopped.

The sensation that started at the back of his hand climbed up his **forearm** to his shoulder. The pan was still boiling, the steam was still rising, and yet for those three seconds, he couldn't hear a single sound.

Daniel put the spoon in his mouth.

"The reduction is good."

He said it without lifting his head. His voice landed level with Hangyeol's forehead.

"The finish is short on sweetness."

"The wine's sugar level was low, so..."

"One more knob of butter. Mount it again."

"Yes."

"And."

Daniel set the spoon down.

"Keep the temperature log on a two-hour interval. That's where Mackenzie starts digging."

"Mackenzie?"

"Head auditor. On one of those three days she'll be standing right in front of you — count on it."

Daniel **withdrew**. Only when the pressure eased did Hangyeol realize he'd been holding his breath.

"Once you're done, get it checked and go home."

The footsteps receded. The door closed.

Hangyeol braced both hands on the counter and let out a long breath. The warmth still seemed to **linger** on the back of his hand. He rubbed it off.

"...I must be losing it. All this over the back of a hand?"

It was Korean.

Outside the door, the footsteps retreating down the hallway slowed, by exactly one beat.
