한결은 사흘을 망설이다가 전화를 걸었다. 클로이는 두 번째 신호에 받았다.

"올 줄 알았어."

만난 곳은 매장에서 세 블록 떨어진 카페였다. 클로이는 창가에 앉아 이미 커피 두 잔을 시켜 놓고 있었다.

한결이 잔을 보다가 그녀를 봤다.

"트라이얼은 다음 주 목요일. 시드니 본점 주방에서 여덟 시간."

클로이가 서류를 밀어 왔다.

"지원자 여섯 명. 자리는 하나. 후원 주체는 AURA 그룹 시드니 법인이고, 지명은 심사 통과자한테만 나가."

한결이 첫 장을 넘겼다. 공고문이었다.

한결의 손끝이 종이 위에서 멈췄다.

"확인해 봐도 돼요?"

"해."

클로이가 휴대전화를 꺼내 채용 사이트를 띄워 밀어 줬다. 게시일이 3주 전이었다.

한결은 화면을 한참 봤다.

"여섯 명 중에 유럽 경력 있는 사람도 있어요?"

"둘."

"자격증은요."

"셋."

"……"

"떨어질 수도 있어. 그건 확실히 말해 둘게."

클로이가 커피를 한 모금 마셨다.

"그리고 붙어도 시드니야. 멜버른 아니고."

한결이 서류를 덮었다.

"하나 물어봐도 돼요?"

"물어봐."

"왜 저예요."

클로이가 잔을 내려놓았다. 그리고 창밖을 잠깐 봤다.

"4년 전에 내가 본사 지명 심사 담당이었어."

한결의 등이 굳었다.

"파일 하나가 올라왔어. 멜버른 매장에서 라인쿡을 지명하겠다고. 서한결 씨랑 비슷한 케이스야. 한국에서 온 워홀러."

클로이가 고개를 끄덕였다. 놀란 얼굴은 아니었다.

"그 파일, 내가 반려했어."

한결이 눈을 들었다.

"왜요."

"직무 기술서가 이상했거든."

컵 속에서 커피가 한 번 흔들렸다.

"조건이 여섯 줄이었는데, 그 여섯 줄을 다 충족하는 사람이 세상에 한 명밖에 없어 보였어. 한국 어느 지역 육수 기법을 명시해 놨더라고. 그런 걸 왜 쓰겠어."

"……"

"공고는 냈어. 28일 채웠고. 지원자도 왔어. 근데 다 떨어뜨렸지. 당연히 떨어질 조건이었으니까."

클로이가 한결을 봤다.

"그건 노동시장 테스트가 아니야. 그냥 절차를 흉내 낸 거지."

"그래서 반려하신 거예요?"

"응."

"……"

"그리고 그건 지금도 옳았다고 생각해."

"그런데."

클로이가 말을 이었다.

"반려하고 한 달쯤 뒤에 소식을 들었어. 그 사람 그만뒀다고."

"……"

"내 서류 한 장이 사람 하나를 이 나라 밖으로 밀어낸 거지."

그녀가 손가락으로 테이블을 한 번 두드렸다.

"내가 계속 걸렸던 건 그거야. 그 사람이 진짜 실력이 없었는지 아닌지를 나는 끝까지 모른다는 거."

한결이 잔을 잡았다.

"조건을 그렇게 써 놨으니까 비교할 방법이 없었어. 다니엘이 그 사람을 지키려고 한 짓이, 그 사람이 평가받을 기회를 없애 버린 거지."

"……"

"그러니까 이번엔 제대로 된 문으로 들어와. 떨어지면 떨어지는 거고."

클로이가 서류철을 한결 쪽으로 밀었다.

"그게 내가 너한테 관심 있는 이유야. 로맨틱한 거 아니고."

한결이 짧게 웃었다.

"……알고 있었어요."

"거짓말."

"지난주까지는 몰랐어요."

카페를 나오기 전에 한결이 물었다.

"다른 방법도 있긴 해요."

"뭔데."

"세컨드 워홀이요. 농장에서 88일 채우면 1년 더 나오잖아요."

클로이가 눈썹을 올렸다.

"그것도 생각은 해 봤어요. 1년 벌면 그동안 경력 더 쌓아서 다시 신청할 수도 있고."

"88일이 몇 달인지 알아?"

"석 달이요."

"석 달 동안 칼 안 잡으면 손이 어떻게 되는지도 알고?"

한결이 대답하지 않았다.

"돌아와서 다시 소스 파트 설 수는 있어. 근데 석 달 전 너보다는 못해. 그리고 그 석 달이 이력서에 뭐로 남는지 생각해 봤어?"

"……농장이요."

"그래. 셰프 경력 3년이 아니라, 셰프 경력 2년 9개월에 농장 3개월."

클로이가 가방을 들었다.

"그것도 길이야. 나쁘다고 안 해. 근데 넌 그거 하려고 여기 온 거 아니잖아."

한결은 그 자리에 잠깐 서 있었다.

*자기 이름으로 나간 접시.*

한국에서 5년 동안 없었던 것이고, 이 나라에서 여덟 달 만에 처음 종이에 적혔던 것이었다.

"클로이."

"응."

"목요일에 가겠습니다."

클로이가 처음으로 제대로 웃었다.

"좋아. 그럼 하나만."

"네."

"다니엘한테 말하고 와."

한결이 고개를 들었다.

"몰래 오면 그 사람은 또 자기가 뭘 해 줬어야 했다고 생각할 거야."

클로이가 문을 밀었다.

"그건 네가 끊어 줘야 해. 나는 못 해."

그날 밤, 마감 뒤.

한결은 오피스 앞 복도에 섰다. 문 아래로 불빛이 새어 나오고 있었다.

노크하려던 손이 멈췄다.

그중에 어느 것도 이 남자가 듣고 싶어 할 말이 아니었다.

한결은 손을 내리고, 다시 올렸다.

"들어와."

문을 열자 다니엘이 책상 앞에 앉아 있었다. 서류는 여전히 그 자리에 있었다. 서명란도 여전히 비어 있었다.

"다니엘."

"응."

"목요일에 시드니 가요."

다니엘의 펜이 멈췄다.

그는 고개를 들지 않았다. 몇 초쯤 그대로 있다가, 펜을 내려놓았다.

"……트라이얼."

"네."

"클로이가 조건 다 얘기했나."

"했어요. 여섯 명이고 자리는 하나래요."

"떨어지면 넌 한국으로 가."

"압니다."

다니엘이 그제야 고개를 들었다.

한결은 그 눈을 보고 조금 놀랐다. 화가 나 있을 거라고 생각했는데 아니었다.

"한결."

"네."

"나 그날 매장에 있어야 해."

"알아요."

"목요일 디너 예약이 다 찼어. 못 가."

"안 오셔도 돼요."

한결이 말했다.

"오시면 안 되고요."

다니엘이 그를 봤다.

"거기서 저 아는 사람 하나도 없어야 해요. 그래야 붙어도 제 거예요."

방 안이 조용해졌다.

그리고 다니엘이, 아주 짧게 웃었다. 웃음이라기보다는 숨을 뱉는 쪽에 가까운 소리였다.

"그 말."

"네."

"4년 전에 누가 나한테 했어야 했던 말이야."

한결이 문손잡이를 잡았다.

"그럼 이제 그 얘기 해 주실래요?"

Hangyeol hesitated for three days and then made the call. Chloe picked up on the second ring.

"I thought you'd come."

They met at a cafe three blocks from the restaurant. Chloe was sitting by the window with two coffees already ordered.

One of them was black, no sugar.

Hangyeol looked at the cup, then at her.

"You ordered without asking."

Chloe shrugged.

"You can tell from what people drink in a kitchen. I did that for six years too."

Hangyeol sat down.

"English, or shall I go slowly."

"Slowly, please."

"Good. Then I'll take it easy too."

Chloe set a folder on the table.

"The trial is next Thursday. Eight hours in the Sydney main kitchen."

Chloe pushed the papers across.

"Six applicants. One seat. The sponsor is AURA Group Sydney, and the nomination goes only to whoever passes."

Hangyeol turned the first page. It was a job listing.

*Required: at least three years in fine dining. Experience running a sauce or garde manger section alone. Able to communicate in a kitchen in English.*

It was three lines. No shiraz, and no Korean.

"This is......"

"The listing went out three weeks ago. Before I knew your name."

Hangyeol's fingertips stopped on the paper.

"May I check it?"

"Go ahead."

Chloe took out her phone, opened the hiring site and pushed it over. The posting date was three weeks back.

Hangyeol looked at the screen for a long time.

"Do any of the six have European experience?"

"Two."

"Certificates?"

"Three."

"......"

"You could lose. I'll be clear about that."

Chloe took a sip of her coffee.

"And even if you win, it's Sydney. Not Melbourne."

Hangyeol closed the folder.

"May I ask one thing?"

"Ask."

"Why me."

Chloe set her cup down. Then she looked out of the window for a moment.

"Four years ago I was the one who **assessed** nominations at head office."

Hangyeol's back went stiff.

"A nomination file came up. The Melbourne restaurant wanted to nominate a line cook. A case much like yours. A working holiday cook from Korea."

"......Jungwoo."

"You even know the name."

Chloe nodded. She did not look surprised.

"That file. I **rejected** it."

Hangyeol raised his eyes.

"Why."

"The job description was strange."

The coffee moved once inside the cup.

"There were six lines of conditions, and it looked as if only one person in the world could meet all six. It named a stock technique from one region of Korea. Why would anyone write that."

"......"

"The listing did run. It ran the full twenty-eight days. Applicants did come. And every one of them was turned down, because the conditions were built to turn them down."

Chloe looked at Hangyeol.

"That's not labor market testing. That's just a copy of the **procedure**."

"Is that why you rejected it?"

"Yes."

"......"

"And I still think it was right."

"But."

Chloe went on.

"About a month after I rejected it, I heard something. That the man had quit."

"......"

"One sheet of paper from me pushed a person out of this country."

She tapped the table once with a finger.

"That's what kept bothering me. That I'll never know whether he really lacked the skill or not."

Hangyeol took hold of his cup.

"The conditions were written that way, so there was no way to compare him with anyone. What Daniel did to protect that man took away the man's chance to be judged."

"......"

"So come in through the proper door this time. If you lose, you lose."

Chloe pushed the folder toward Hangyeol.

"That's why I'm interested in you. It's not romantic."

Hangyeol gave a short laugh.

"......I knew that."

"Liar."

"Until last week I didn't."

Before they left the cafe, Hangyeol asked something.

"There's another way, though."

"What is it."

"A second working holiday. If I put in eighty-eight days on a farm, I get another year."

Chloe raised an eyebrow.

"I've thought about it. If I buy a year, I can build more experience in that time and apply again."

"Do you know how many months eighty-eight days is?"

"Three months."

"And do you know what happens to your hands if you don't hold a knife for three months?"

Hangyeol did not answer.

"You can come back and work the sauce section again. But you'll be worse than the cook you are right now. And have you thought about what those three months become on a **resume**?"

"......A farm."

"Right. Not three years of chef experience. Two years and nine months of chef experience, plus three months of farm work."

Chloe picked up her bag.

"That's a road too. I'm not saying it's a bad one. But you didn't come here to do that."

Hangyeol stood there for a moment.

*A plate that went out under his own name.*

It was the thing five years in Korea had never given him. In this country, after eight months, it had gone onto paper for the first time.

"Chloe."

"Yes."

"I will go on Thursday."

Chloe smiled properly for the first time.

"Good. Then one thing."

"Yes."

"Tell Daniel before you come."

Hangyeol raised his head.

"If you come in secret, that man will think again that there was something he should have done for you."

Chloe pushed the door.

"You have to cut that off. I can't."

That night, after closing.

Hangyeol stood in the corridor outside the office. Light was leaking out from under the door.

The hand that was going to knock stopped.

*What do I say.*

That he would go to Sydney. That he would not take the file that the man had given him. That if he lost he would go back to Korea.

Not one of those was a thing this man would want to hear.

Hangyeol lowered his hand, then raised it again.

"Come in."

When he opened the door Daniel was sitting at the desk. The file was still in its place. The signature line was still empty.

"Daniel."

"Yes."

"I'm going to Sydney on Thursday."

Daniel's pen stopped.

He did not raise his head. He stayed like that for a few seconds, then set the pen down.

"......The trial."

"Yes."

"Did Chloe tell you all the conditions."

"She did. Six people and one seat."

"If you lose, you go back to Korea."

"I know."

Only then did Daniel raise his head.

Hangyeol was a little **startled** by what he saw in those eyes. He had thought the man would be angry, and he was not.

"Hangyeol."

"Yes."

"I have to be at the restaurant that day."

"I know."

"Thursday dinner is fully booked. I can't go."

"You don't have to come."

Hangyeol said.

"And you must not."

Daniel looked at him.

"There must not be a single person there who knows me. That way, if I win, it's mine."

The room went quiet.

And then Daniel laughed, very briefly. It was closer to letting a breath out than to a laugh.

"That line."

"Yes."

"That's what someone should have said to me four years ago."

Hangyeol took hold of the door handle.

"Then will you tell me about it now?"
