482는 혼자 신청할 수 없는 비자였다. 승인 사업장 자격을 가진 고용주가 자리를 만들고, 그 자리를 한 달간 공고에 걸고, 연봉 기준을 맞춰야 나온다.

그 서류를 써 줄 수 있는 사람은 이 주방에 한 명뿐이었다.

지금 눈앞에서 클립보드를 내밀고 있는 사람.

"마음에 안 드는 조항이라도 있나."

머리 위에서 목소리가 떨어졌다.

워크인 냉장고 안은 영하 4도였다. 주방에서 끌고 들어온 땀이 목덜미에서 빠르게 식었다. 양옆으로 쌓인 식자재 컨테이너가 통로를 좁혔고, 그 좁은 통로를 다니엘 강의 어깨가 완전히 막고 서 있었다.

188센티미터. 고개를 들면 천장 조명이 그의 어깨에 가려 보이지 않았다.

저녁 영업 10분 전에, 이 남자는 신입을 냉장고로 불러들였다.

"읽고 있습니다."

"10분 걸릴 분량은 아닌데."

"저한테는 영어입니다."

다니엘의 눈이 잠깐 가늘어졌다. 웃은 건지 짜증을 낸 건지 판단이 서지 않는 얼굴이었다.

"질문 하나 해도 됩니까."

한결이 볼펜 뚜껑을 닫았다. 서명은 아직이었다.

클립보드를 내밀고 있던 다니엘의 손이 그대로 멈췄다. 서명을 받으러 온 사람 앞에서 서명을 미루는 건, 이 주방에서 아마 처음 있는 일이었을 것이다.

"4번 조항, 전 직원한테 적용되는 겁니까."

"무슨 뜻이지."

"이 레스토랑 전체 규정인지, 아니면 제 계약서에만 들어간 건지 묻는 겁니다."

컴프레서 돌아가는 소리만 낮게 깔렸다.

다니엘이 고개를 조금 기울였다. 서늘한 조명 아래에서 호박색 눈이 유리처럼 한 번 반짝였다.

"내가 만든 규칙이다."

"그건 답이 아닌데요."

"주방에 서는 사람 전부야."

"헤드 셰프 포함해서요?"

다니엘이 잠깐 그를 봤다.

"포함해서."

다니엘이 서류판을 손끝으로 툭 밀어 왔다.

"만족했으면 사인해. 8분 남았다."

한결은 하단에 이름을 갈겨썼다. 볼펜 끝이 종이를 파고들었다.

서한결.

세 글자를 쓰는 데 3초가 걸렸다. 그 3초에 여덟 달이 걸려 있었다.

다니엘이 클립보드를 거두어 갔다. 손끝 하나 닿지 않았는데도, 거두어 가는 동작 하나로 이 좁은 공간의 소유권이 누구에게 있는지가 정리됐다.

"네 비자, 여덟 달 남았지."

다니엘이 철문 손잡이를 잡으며 말했다.

"그 안에 소스 파트 혼자 못 돌리면 나는 아무것도 안 써 줘. 레퍼런스도, 482도."

한결의 손끝이 굳었다. 자기가 계산하고 있던 걸 상대가 먼저 꺼내 놓는 기분이었다.

"나는 못하는 사람한테 서류 안 써 준다."

"여덟 달이면 충분합니다."

"그 말, 기억해 두지."

철문이 열렸다. 주방의 열기가 냉기 사이로 밀려들었다. 두 온도가 섞이는 자리에서 한결의 팔에 소름이 돋았다.

다니엘의 등이 통로 끝으로 사라졌다. 한결은 언 손가락을 조리복에 문질러 닦았다.

"……씨. 존나 워커홀릭에 깐깐하네."

한국어로, 아주 낮게.

여기서 한국어를 알아듣는 인간은 없다. 여덟 달 동안 이 혼잣말이 유일한 숨구멍이 될 참이었다.

통로 끝에서 구두 소리가 멈췄다.

한결이 반사적으로 숨을 죽였다. 하지만 다니엘은 돌아보지 않았다. 어깨 너머로 짧게 던졌을 뿐이었다.

"Get some sleep tonight, Han."

오늘 밤은 좀 자 둬라.

한결은 그게 신입에 대한 형식적인 배려라고 생각했다.

"Welcome to my kitchen. Don't break my rule."

The signature line was empty.

Hangyeol held his pen and read Clause 4 for the third time.

No personal relationships inside the kitchen. Violation meant immediate **termination** of the contract.

Hangyeol's working holiday visa had eight months left. After that, there were only two paths. Go back to Korea, or find someone to **sponsor** the 482.

The 482 was a visa he could not apply for alone. An employer with approved sponsor status had to create the position, advertise it for a month, and meet the salary requirement.

Only one person in this kitchen could sign that paper.

The one in front of him now, holding out a clipboard.

"Is there a clause you don't like?"

The voice dropped from above his head.

Inside the walk-in fridge, it was minus four degrees. Sweat dragged in from the kitchen cooled fast on his neck. Food containers stacked on both sides narrowed the passage, and Daniel Kang's shoulders blocked it completely.

188 centimeters. Looking up, he couldn't see the ceiling light past Daniel's shoulders.

Ten minutes before dinner service, this man had called the new hire into the fridge.

"I'm reading it."

"That's not ten minutes' worth of reading."

"To me, it's English."

Daniel's eyes narrowed for a moment. It was hard to tell whether he was smiling or annoyed.

"Can I ask you something?"

Hangyeol capped his pen. He still had not signed.

Daniel's hand, still holding out the clipboard, stopped. Delaying a signature in front of the man who came for one was probably a first in this kitchen.

"Clause 4—does it apply to every employee?"

"What do you mean?"

"I'm asking whether it's a rule for the whole restaurant, or something only in my contract."

Only the compressor's low hum filled the silence.

Daniel tilted his head slightly. Under the cold light, his amber eyes flashed once, like glass.

"It's a rule I made."

"That's not an answer."

"Everyone who works this kitchen."

"Including the head chef?"

Daniel looked at him for a moment.

"Including me."

Daniel **nudged** the clipboard forward with his fingertips.

"Sign if you're satisfied. Eight minutes left."

Hangyeol **scrawled** his name at the bottom. The pen tip dug into the paper.

Hangyeol Seo.

Writing three syllables took three seconds. Eight months hung on those three seconds.

Daniel took the clipboard back. He never touched him—not even a fingertip—yet that one motion settled who owned this narrow space.

"Your visa. Eight months left."

Daniel said, gripping the steel door handle.

"If you can't run the sauce section alone by then, I sign nothing. No reference. No 482."

Hangyeol's fingers went stiff. It felt like Daniel had put Hangyeol's own calculations into words before Hangyeol could open his mouth.

"I don't sign for people who can't do the job."

"Eight months is enough."

"I'll remember you said that."

The steel door opened. The kitchen's heat pushed in through the cold. Where the two temperatures met, goosebumps rose on Hangyeol's arms.

Daniel's back disappeared down the passage. Hangyeol rubbed his frozen fingers against his chef's coat.

"...Him. Son of a— Total workaholic. So damn particular."

In Korean. Very low.

No one here understood Korean. For the next eight months, this muttering would be his only breathing room.

At the end of the passage, the footsteps stopped.

Hangyeol held his breath on reflex. But Daniel did not turn around. He only tossed a few words over his shoulder.

"Get some sleep tonight, Han."

Hangyeol took it for routine courtesy toward a new hire.

"Welcome to my kitchen. Don't break my rule."
